How to prepare tea
Hot Tea
- Temper the teapot
- Fill teapot with fresh cold water and bring to a boil
- Place the stocking containing leaves in the teapot (one scant per cup)
- Allow to steep 3-5 minutes for blacks and oolongs, 2-3 minutes for green, 1-2 minutes for white
- Decant or remove stocking with the leaves from the teapot
- Stir the pot and serve
- Sweeten while hot, if desired
Iced Tea
- Prepare hot tea as directed above adding a little extra loose tea
- Sweeten while hot, if desired
- Add fresh cold water to dilute
- Serve over ice
To Decaffeinate Tea
- Place stocking with leaves in teapot
- Pour hot water over stocking allowing to steep only 35 seconds
- Remove stocking with leaves from teapot
- Pour out teapot
- Prepare hot tea as directed above by reusing stocking with previously steeped leaves
